  • 2 cups flour
  • 1-1/2 tsp baking soda
  • ½ tsp salt
  • 4 over ripe bananas
  • 1 cup sugar
  • ¾ cup (1-1/2 sticks) melted butter (cooled)
  • 2 large eggs
  • 1 tsp vanilla
  • ½ cup pecans, finely chopped



  1. Lightly grease and flour loaf pan
  2. In medium bowl combine flour, baking soda and salt. Set aside
  3. In a small bowl mash 2 bananas with fork so they have texture. Set aside
  4. In mixer, whip 2 other bananas, sugar butter, eggs and vanilla
  5. Add in dry ingredients
  6. Fold in the mashed bananas and pecans
  7. Bake until golden brown and toothpick inserted comes out clean
