Hash Brown Breakfast Bake

INGREDIENTS

  • 3 or 4 cups hash browns (OR diced potatoes, browned in skillet w/butter)
  • 1 16oz Jimmy Dean sausage
  • ½ – ¾ cup onions, diced
  • ¼ cup butter (1/2 stick), melted
  • 6 to 8 eggs
  • 16oz cottage cheese
  • 2 cups shredded cheddar cheese

Optional additions: Green or red pepper (diced) and/or fresh or frozen (squeeze dried) spinach or cooked bacon.

DIRECTIONS

  1. In large bowl, melt butter and mix with hash browns
  2. Lightly grease 9×13 pan, and line the hash browns on bottom and up the sides
  3. In saucepan over medium-high heat, cook sausage and onions until sausage crumbles
  4. Place sausage and onions in large bowl, add eggs and cheeses. Mix well
  5. Pour into pan
  6. Bake

NOTE: You can make this the night before, refrigerate and then bake in the morning. But, you will need to add additional cook time (maybe 10-15 minutes
