Banana Cream Pie



  • 2/3 cup sugar
  • ¼ cup corn starch
  • Pinch of salt
  • 3 cups whole milk
  • 4 large egg YOLKS (lightly beaten)
  • 2 Tbsp butter
  • 1 Tbsp vanilla
  • 3 ripe bananas



  • 1-1/2 cup heavy whipping cream
  • 1 Tbsp sugar
  • 1 tsp vanilla




  1. Prepare pie crust and place in pie tin
  2. In medium saucepan over medium heat, mix sugar, corn starch, salt, milk and egg yolks. Stir constantly until it thickens and boils for at least a minute.
  3. Remove from heat and add butter and vanilla
  4. Let cool 10 minutes
  5. Slice ½ of the bananas and place on bottom of pie shell
  6. Cover with ½ the custard
  7. Cut remaining bananas and then add remaining custard
  8. Refrigerate until custard is set



  1. In mixer, combine, whipping cream, sugar and vanilla
  2. Beat to stiff peaks form
  3. Place on top of custard
  4. Refrigerate
