Pumpkin Cookies

1 cup butter

1 cup sugar

1 cup pumpkin (libby’s)

1 egg

½ tsp vanilla

2 cups flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

½ tsp salt

½ cup pecans, finely chopped

(the below frosting is for a double batch of the above)

½ stick butter

8oz. cream cheese

2 tsp vanilla

1 box 10X sugar


In mixer, combine butter, sugar, pumpkin, egg and vanilla

In large bowl mix flour, baking powder, baking soda, cinnamon and salt

Combine dry ingredients into wet.  Mix well

Stir in nuts

Grease cookie sheet and drop by teaspoon


Let cookies cool

In mixer, combine frosting ingredients

Frost cooled cookies
