Chicken with Pilaf, Spinach & Walnuts



1-1/2 Tbsp olive oil

1 cup onions, chopped

1-1/2 cup rice (Uncooked)

1 cup plum tomatoes, diced

½ tsp salt

1 14oz chicken broth

1 cinnamon stick

1 6oz fresh spinach

2 cups chicken, chopped & cooked

½ cup walnuts, chopped

1 Tbsp fresh dill


In skillet, cook chicken until cooked through.  Remove from heat onto plate

In same skillet, heat 1 Tbsp oil over medium-high heat.  Add onion and sauté until brown.  

Stir in rice, cooking one minute, stirring constantly.

Stir in ½ tsp oil, tomato, salt, broth and cinnamon. Bring to a boil

Cover and reduce heat and simmer 15 minutes or until liquid is absorbed

Stir in spinach, cook 2 minutes.

Stir in chicken

Sprinkle with walnuts and dill

Discard cinnamon stick
