Lasagna – Vegetable

LASAGNA – VEGETABLE
350o 30-45 minutes

INGREDIENTS

1 Tbsp olive oil

1 15oz ricotta cheese

1 lb. mozzarella cheese

1-2 cups parmesan cheese

1 box lasagna noodles

1 medium onion, chopped

1-2 Tbsp fresh garlic, minced

1 12oz tomato paste

1 29oz diced tomatoes

½ tsp salt

½ tsp pepper

1 tsp garlic powder

½ tsp sugar

½ tsp oregano

1 Tbsp parsley
Optional veggies (choose whatever ones you want)

Zucchini

Squash

Spinach

Broccoli heads (semi-cooked or steamed)

Mushrooms

DIRECTIONS

In a large pot, place a Tbsp of olive oil, cook chopped onions and garlic.

Add in tomato paste, dice tomatoes, salt, pepper, garlic powder, sugar, oregano, parsley and the onion and garlic.  Let simmer while noodles are cooking.

In another large pot, add water and 1 Tbsp salt, cook lasagna noodles until el dente

In large baking dish layer as follows

Sauce on bottom

Lasagna noodle

Ricotta

Mozzarella

Parmesan

Veggies

Repeat from “a” ending with sauce

Add more parmesan on top of sauce

Bake
