Beef Stew



1 lb beef chunks

2 tsp vegetable oil

2 large yellow onions, thinly sliced (about 3 cups)

2 cups sliced mushrooms

1 pkg beef stew starter

2 cloves garlic, minced

2 tsp tomato paste

2 cups beef broth

4 cups carrots, sliced

2 potatoes, sliced (about 2 cups)

1 cup green bean

1 can corn (w/juices)

¼ cup parsley

In large pot, heat oil over medium-high heat. Add beef and sauté until browned

Remove meat and place on plate

Add onions and mushrooms to pot, sauté for 6 minutes.  Add garlic and sauté for 1 minute.

Pour off fat. Return beef to pot

Add stew starter, paste and broth.  Add enough water to just cover mixture. Bring to a boil.

Reduce heat to low and simmer until beef is tender. About 1-1/2 hours

Skim off any foam

Add carrots, potatoes, green beans, and corn, and let simmer 15 minutes

Sprinkle in parsley
