APPLE PECAN STUFFING

¼ cup butter (1/2 stick)
1 medium onion, finely chopped
1 cup celery, finely chopped (about 4 stalks)
1 Gala apple, peeled and chopped
32oz chicken broth (low sodium)
¼ cup apple cider
12oz Stove Top turkey or chicken stuffing (2 boxes)
¼ cup toasted pecans, finely chopped
¼ – ½ cup chopped fresh cranberries
1 tsp parsley
In non-stick skillet over med-high heat, melt butter and add onion & celery. Cook, stirring occasionally until tender, about 5 minutes.
Stir in apple, cook until tender, about 4 minutes
Raise heat to high, pour in broth and cider, bring to a boil
Remove from heat and add stuffing, pecans and parsley. Toss until thoroughly moistened.
