Beef and Vegetable Stir Fry



½ cup beef broth

2 Tbsp soy sauce

1 tsp ginger

1 clove garlic, minced

½ tsp orange peel

1 Tbsp vegetable oil

12oz steak, cut into thin strips

1 green or red pepper, cut into strips

1 cup carrots, sliced

1 cup celery, sliced

½ cup green onion, sliced (including tops)

½ cup mushrooms, sliced

2 cups bean sprouts (optional)

Serve over brown rice


  1. In a small bowl, combine broth, soy sauce, ginger, garlic and orange peel. Mix well and set aside
  2. In a wok, heat oil over high heat. Add beef and stir fry just until no longer pink (about 3 minutes). Place beef on plate
  3. Add bell pepper, carrots, celery, green onion and mushrooms to wok.
  4. Stir in broth mixture. Stir fry until veggies are crisp-tender (about 4 minutes)
  5. Return beef to wok and stir fry for 2 minutes.
  6. Serve over rice
