Yields 12 muffins




  • ½ cup butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2-1/2 cups fresh blueberries (or 1 can drained)
  • 2 tsp sugar (for topping)




  1. In mixer, combine butter, sugar, vanilla. Add eggs one at a time. Mix well
  2. In a large bowl, combine flour, baking powder and salt
  3. Add dry ingredients into wet alternating with the milk
  4. Mash ½ cup blueberries with fork
  5. Fold the mashed blueberries into the batter
  6. Then fold in the whole blueberries
  7. Grease muffin tins well, including the top of the tin
  8. Pile batter high in each cup
  9. Sprinkle sugar over the top of each muffin batter
  10. Bake
  11. Let cool 30 minutes before removing from cup
