Chicken Broccoli Casserole

4 chicken breasts, cooked and shredded

½ tsp salt

2 cups white rice, cooked (brown rice works too)

3 cups broccoli, cooked (or steamed) & chopped

1 cup sour cream

½ cup mayonnaise

1 Tbsp lemon juice

1 10oz can condensed cream of chicken soup

10oz cheddar cheese, grated

½ tsp salt

¼ tsp pepper


  1. In a medium pot, add water and chicken and ½ tsp salt; bring to a boil, cooking chicken through. Let cool and shred
  2. Cook rice according to package
  3. Cook or steam broccoli until done
  4. Preheat oven and grease a 9×13 baking dish with butter or nonstick cooking spray
  5. Spread the cooked rice in an even layer in the baking dish
  6. Make a second layer with the cooked broccoli
  7. In a small bowl, combine the sour cream, lemon juice, soup, ½ of the cheddar cheese, salt and pepper
  8. Pour over the mixture and top with the remaining cheese
  9. Bake and let stand for 5 minutes before serving
