CHICKEN N SPINACH PASTA BAKE

8oz uncooked rigatoni
1 Tbsp olive oil
1 medium yellow onion, chopped (about 1 cup)
1 10oz pkg frozen chopped spinach, thawed
3 cups chicken breast, cooked & cubed
2 14oz cans Italian diced tomatoes
1 8oz container chive-and-onion cream cheese
½ tsp salt
½ tsp pepper
1-1/2 cup (6oz) shredded mozzarella cheese
Prepare rigatoni according to package directions
In a non-stick skillet, add oil over medium high heat and cook chicken. Remove chicken and place in a large bowl. Set aside
In same skillet, add a little more oil and cook onions until tender. Place them in the bowl with the chicken.
Drain chopped spinach well, squeezing excess water out.
In the chicken bowl, combine rigatoni, spinach, tomatoes, cream cheese, salt & pepper. Mix well
Spoon mixture into baking dish and sprinkle evenly with the mozzarella cheese
Bake, covered with foil for 30 minutes.
Uncover and bake 15 minutes more or until bubbly
