Creamy Broccoli Soup



1 small bunch broccoli OR 1 pkg (10oz) frozen chopped broccoli

1-1/2 Tbsp olive oil

1 medium yellow onion, chopped (about 1 cup)

2 cloves garlic, minced

2 medium potatoes, peeled and cubed

2 cups water

1 can (14-1/2 oz) chicken broth

2 cups milk

½ tsp dill (optional)

1/8 tsp pepper


Discard tough stem ends from broccoli. Separate flowerets and chop tender stems, set aside.

In large pot, heat oil over low heat. Add onion and garlic.  stirring frequently until tender (about 5-10 minutes)  

Increase heat to high, add broccoli, potatoes, water and broth and bring to a boil.

Cover and reduce heat to low and simmer until veggies are tender (about 15 minutes)

Strain soup reserving liquid

In blender or food processor, process broccoli mixture until smooth.  

Return broccoli mixture and reserved liquid to pot.

Stir in milk, dill and pepper.  Bring to a boil over medium heat
