Crock-Pot Chicken Taco Chili




Low 6-8 hours

High 4 hours

1 small onion, chopped

1 15oz can black beans, drained

1 15oz can kidney beans, drained

1 8oz can tomato sauce

10oz pkg frozen corn

2 10oz cans diced tomatoes w/chilis

4oz can chopped green chili peppers, chopped

1 packet taco seasoning

1 Tbsp cumin

1 Tbsp chili powder

3 boneless chicken breasts

¼ cut chopped cilantro (optional)
Can serve with sour cream, Tostito scoops, salsa


In crockpot, add chopped onion, drained black & kidney beans, tomato sauce, diced tomatoes, cumin, chili powder and taco seasoning.  Mix well

Nestle chicken in to completely cover and cook on low 6-8 hours of 4 hours on high

½ hour before serving, remove chicken and shred

Found if you place in kitchen aid mixing bowl with regular beater, it will shred the chicken much quicker than using a fork

Return chicken to crock pot, and stir in

Optional: top with fresh cilantro and your favorite topping

NOTE: Found this makes a big batch.  If you don’t want to eat it 3 or 4 times, consider cutting everything in half or give some away.
