DATE & NUT COOKIES

Makes 5-6 dozen
INGREDIENTS
1 cup Crisco shortening
2 cups packed brown sugar
2 eggs
½ cup water, milk or buttermilk
1 tsp vanilla
3-1/2 cups flour
1 tsp salt
1 tsp baking soda
1/8 tsp cinnamon
Date filling:
2 cups dates, cut in small bits
¾ cup sugar
¾ cup water
½ cup chopped nuts (walnuts or pecans)
DIRECTIONS
In mixer, combine crisco, brown sugar, and eggs
Stir in water and vanilla
In medium bowl mix, flour, salt, baking soda and cinnamon
Combine dry into wet
Drop with teaspoon onto Ungreased cookie sheet
In medium pot, cook date filling, stirring constantly until thick
Place ½ tsp date filling onto dough already on cookie sheet
Cover the date filling with a ½ tsp more dough
