SUBSTITUTIONS and HELPFUL HINT

 

  • 1 tablespoon = 3 teaspoons
  • 1 tablespoon flour = 1-1/2 teaspoons cornstarch
  • 1 cup self-rising flour = 1 cup sifted all-purpose flour + 1-1/2 tsp baking powder + 1/8 tsp salt
  • 1 cup buttermilk = 1 tablespoon lemon juice or white vinegar + enough milk to make 1 cup
  • Half-and half = 1-1/2 tablespoons melted butter + enough whole milk to make 1 cup
  • 1 teaspoon vinegar = 2 teaspoons lemon juice
  • Make 1 cup confectioners’ sugar by streaming ¾ cup granulated sugar into the small opening of a blender set at high speed
  • To correct an oversalted soup or stew, add a couple of peeled and quartered white potatoes and cook
  • When selecting cuts of meat, such as hams or roasts, allow 8 ounces, uncooked, per person
