Lemon Bars

Vegetable oil for greasing

1-1/2 stick butter, diced

¼ cup packed brown sugar

½ cup 10X sugar

¼ tsp salt

2 cups flour

4 large eggs AND 2 yolks

2 cups sugar

1/3 cup flour

1 tsp grated lemon zest

1 cup fresh lemon juice (8 lemons)


Make the crust

Grease 9×13 with vegetable oil and line with foil w/2” overhang on all sides

Grease foil with oil

In mixer, pulse butter, flour, brown sugar, 10X sugar and salt until dough comes together (about 1 minute)

Press evenly on bottom and ½” up sides in pan

Bake 25 minutes at 350o
Prepare the filling

In medium bowl, wisk eggs, yolks, sugar, and flour until smooth

Wisk in lemon zest and fresh lemon juice

Reduce oven to 300o 

Pour filling over warm crust and return to oven

Bake 30-35 minutes

Let cool in the refrigerator for 2 hours

Lift out with foil and slice

Dust with 10X sugar

Remove foil from bottom of bar
