Mango Bread

  • ½ cup butter
  • ¾ cup sugar
  • 2 eggs
  • 1 Tbsp lemon juice
  • ¼ tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup mango, puree’d
  • 1-1/2 cups mango, diced
  • ½ cup pecans, chopped (optional)
  • ½ cup raisins, chopped (optional)



  1. In mixer, cream together butter, sugar, eggs, lemon juice, and vanilla
  2. In large bowl, combine flour, baking soda, baking soda, salt
  3. Add dry ingredients into wet, mix well
  4. Fold in puree’d & diced mango, pecans and raisins
  5. Lightly grease loaf pan
  6. Place batter into pan
  7. Bake
  8. If toothpick comes out clean, it’s done. If not, bake a little longer.
