Penne Pasta Casserole


350o 25 minutes


1 lb ground chuck or turkey

1 large onion, chopped

1 14.5oz diced tomatoes

1 6oz tomato paste

1 small can tomato sauce

12 oz penne pasta

3 cups (12oz) shredded mozzarella

½ cup water


In large pot, cook penne in water and 1 tsp salt.  Drain

In large skillet, cook ground chuck (or turkey) until no longer pink

Drain fat

Stir in diced tomatoes, paste and ½ cup water.  Season to taste (salt, pepper, etc)

Add cooked penne to mixture. Stir

Add small can of tomato sauce, if it looks dry.

Coat baking dish with cooking spray (i.e. Pam)

Place mixture into baking dish and cover with shredded mozzarella

Bake UNcovered until heated through and cheese is melted
