Pork Roast Apple Glazed

400o 1 hour


1 Tbsp olive oil

1 medium onion, chopped (about 1 cup)

2 cloves garlic, chopped

½ cup dark beer or apple cider

½ cup chili sauce

½ cup apple jelly

1 tsp Dijon mustard

1 boneless pork loin roast (1-1/2 lb), trimmed


Preheat oven to 400o

In medium sauce pan, heat oil over medium heat.  Add onion and garlic.  Cook, stirring until tender (about 5 minutes)

Add beer, chili sauce, apple jelly and mustard to saucepan. Bring to a boil, reduce heat to low and simmer, stirring occasionally until mixture thickens (about 20 minutes)

Line baking pan with foil; place pork on top, brush 1/3 of glaze over pork

Roast pork, brushing with remaining glaze every 15 minutes until a thermometer inserted in the center of meat registers 160o.

Placee pork on a carving board, let stand 10 minutes

Slice and arrange on a serving platter

VARIATION:  Substitute 1 pork tenderloin (about 1-1/4 lbs) trimmed for the pork loin.  Roast at 400o brushing with glaze every 10 minutes until a thermometer inserted in thickest part of meat registers 160o (about 30 minutes)
