Potato Salad



  • 1 red skinned potato for each person (and one for the pot)
  • 1 egg for every 2-3 potatoes, boiled
  • Mayonnaise
  • Onion, chopped
  • Celery, chopped
  • Salt
  • Pepper
  • Red or green pepper, chopped (optional)




  1. Hard boil the eggs
  2. Prick potatoes with fork (deeply) and microwave like a baked potato
  3. Once potatoes are cooled, peel and chop
  4. Peel and chop eggs
  5. In a large bowl combine potatoes and eggs.
  6. Add mayonnaise, onion, celery, salt & pepper (to taste)
  7. Refrigerate
