​PUMPKIN CAKE

INGREDIENTS

4 eggs

2 cups sugar

1 cup vegetable oil

1 can (approx. 16oz) Libby’s pumpkin (solid packed)

2 cups flour

2 tsp baking soda

2 tsp cinnamon

2 tsp baking powder

1 tsp salt
Frosting:

1 box (16oz) 10X sugar

1 8oz pkg cream cheese

1 stick butter

1 tsp vanilla

1 cup walnuts, chopped

DIRECTIONS

In mixer, combine eggs, sugar, oil, and pumpkin

In a medium bowl, sift flour, baking soda, cinnamon, baking powder and salt

Mix dry ingredients into wet. Mix well

Grease and flour either 9×13 pan or bundt pan

Bake

Let cake cool
Frosting:

In mixer, combine cream cheese, butter and vanilla. Mix until smooth

Add in 10X sugar.  Mix until creamy

Stir in walnuts into icing

Frost cake
