1 ​pound ground beef

1/2 cup onion, chopped 
1 ​pound ground beef

1/2 cup onion, chopped
1 clove minced garlic
1/4 cup flour
1/2 teaspoon salt
1 teaspoon black pepperServ
1/2 teaspoon Worcestershire sauce
2 cups milk

Brown ground beef, onion and garlic until beef is cooked. Drain. Put hamburger back in skillet and add flour, salt, pepper, Worcestershire sauce and milk. Simmer until gravy us thick while stirring occasionally

Serve over lightly toasted bread

Western Beans

WESTERN BEANS

Simmer – low heat 30 minutes

INGREDIENTS

1 32oz can pork & beans

½ lb ground chuck

¼ or ½ onion, chopped

1 tsp mustard

¼ cup ketchup

½ tsp chili powder

Handful brown sugar
DIRECTIONS

In large pot, cook meat until browned, drain fat

Add diced onion and cook until tender

Add remaining ingredients and simmer for ½ hour

Spanish Rice

SPANISH RICE
350o 1 hour

INGREDIENTS

1-1/2 cups white rice

¼ lb bacon, cut into small strips

½ lb ground chuck

½ – 1 green bell pepper, chopped

½ cup onion, chopped

Salt

Pepper

1 medium can stewed tomatoes

DIRECTIONS

In medium pot, cook rice

In skillet over medium-high heat, brown bacon and remove from pan.  Do NOT drain fat

In same skillet brown ground chuck, drain fat

Grease baking dish with Crisco and combine, rice, bacon, ground chuck, bell pepper, onion, salt and pepper. 

Add enough stewed tomatoes to moisten mixture

Twice Baked Potatoes

TWICE BAKED POTATOES
350o 20 minutes

INGREDIENTS

4 large russet potatoes

1 Tbsp butter

½ cup green bell pepper, diced

½ cup yellow onion, diced

1 cup mushrooms, thinly sliced

2 slices Canadian bacon or lean ham (about 2oz), diced

¼ cup shredded cheddar cheese, divided

3 Tbsp milk

DIRECTIONS

Preheat oven.

Scrub potatoes, pat dry.  Pierce several times with a fork and bake in microwave until tender.  Let cool

While potatoes are cooking, melt butter in a large nonstick skillet over medium heat.  Add the green pepper and onion; sauté until crisp-tender (about 5 minutes).  Stir in mushrooms and bacon; sauté until mushrooms are tender (about 5 minutes) set aside.

Slice off tops of potatoes.  Scoop out insides and place in a medium bowl, keeping shells intact.  

Mash potatoes.  Stir in ½ cup of cheddar cheese, milk and vegetable mixture.

Spoon potato mixture into shells, dividing evenly.  Sprinkle remaining cheese over tops.

Place potatoes on a baking sheet.  Bake until hot (about 20 minutes)

Spinach Casserole

SPINACH CASSEROLE

INGREDIENTS

10 boxes frozen chopped spinach, thawed & drained

1-1/2 lb cheese, your choice (save a little for topping)

1 stick butter

1 sweet onion (vidalia), minced

DIRECTIONS

Squeeze water out of the chopped spinach and place in large bowl

In skillet over medium-high heat, melt butter and sauté onions until clear

Combine onion into spinach, add cheese.  Mix well

Place in 9×13 pan and bake until cheese is bubbly & golden brown

Spinach Tart

SPINACH TART

20-25 minutes
INGREDIENTS

9 inch tart pan lined with pie dough (Use Shaker Pie Crust recipe)

9 oz baby spinach

4 Tbsp butter

1 onion finely chopped

2 heaping cups grated cheddar cheese

2 whole eggs plus 2 yolks  (4 total)

2/3 cup heavy cream

1 tsp Dijon mustard

Salt & fresh ground black pepper

DIRECTIONS

Line pie plate with pie crust and bake 10-15 minutes
Gently cook spinach with half the butter, until wilted.  

Drain and chop finely.  

Heat rest of butter and cook onions until soft.  

Spread spinach and onion over bottom of pie crust
In processor, pulse cheese, eggs, yolks, cream, mustard and seasoning.  

Pour over spinach and onion and return to oven for 20 to 25 minutes until top is golden. 

Turn off heat and leave in oven for 5 minutes.  

Serve.

Sesame Steamed Broccoli

SESAME STEAMED BROCCOLI

350o 10 minutes

INGREDIENTS

1 Tbsp sesame seeds

4 cups broccoli flowerets
Sauce:

2 tsp soy sauce

2 tsp sugar

¼ tsp grated lemon peel

DIRECTIONS:

Preheat oven

Line baking sheet with foil.  Spread sesame seeds in a thin layer.  Bake, stirring occasionally until golden (about 10 minutes)

While sesame seeds are baking, prepare broccoli.  In a large saucepan, bring 2 inches of water to a boil over high heat.  Place broccoli in a steamer basket and place basket in saucepan.  Cover and steam until just crisp-tender, about 5 minutes.  Drain well and place broccoli on a serving plate

While broccoli is cooking, prepare sauce in a small bowl, combine soy sauce, sugar and lemon peel.  Mix well

Drizzle sauce over broccoli; toss to coat.  

Sprinkle with sesame seeds

Serve
